Marinade base
Start with 2 Tbsp of yondu. Yondu gives you a clean, light-tasting base.
· Short rib meat has a strong flavor of its own, so the marinade is better clean and light than heavy.

Sweetness and pepper
Add 1 Tbsp of sugar — about half the yondu — and only 2 pinches of black pepper so it doesn't take over.

Sesame oil and garlic
Add just ½ Tbsp of sesame oil to keep it clean, then 3 Tbsp of coarsely chopped garlic.
· This is a garlic-based marinade, so it takes at least 3 Tbsp for the aroma to come through on the grill.

Marinate
Cut 10.6 oz of trimmed short rib meat into bite-sized pieces, put it in the marinade, and let it sit 10 to 20 minutes. If you have the time, 30 minutes to 1 hour deepens the flavor.
· It looks like a lot of marinade, but it soaks into the meat as time passes.

Grill
Preheat the pan and grill it well on both sides over medium heat. Charcoal over direct flame works, or an air fryer at 350°F (180°C) for about 7 to 10 minutes, then flipped and given 3 to 5 minutes more.

Finish
Finish with a scattering of chives or sesame seeds, however you like it.
You can fix this
If it hasn't burned or stuck to the pan, it can still be fixed.
- Once it is on the grill there is nothing to fix. If the marinade is too salty, let it down with water or pear juice before it goes on.
