How to make it

Make the sauce
Mix the jin-ganjang, water, sugar, garlic, sesame oil, whole sesame seeds, and black pepper.

Sear the pork
Spread the shaved pork belly in a cold pan and sear it over medium-high heat until the fat renders out.

Cook the onion
Add the onion and green onions and sauté until the edges brown.

Finish
Pour the sauce down the side of the pan, reduce it fast, and coat the meat with it.

- Adding the sauce early makes the sugar and soy sauce scorch easily.
You can fix this
If it hasn't burned or stuck to the pan, it can still be fixed.
- Once it is on the grill there is nothing to fix. If the marinade is too salty, let it down with water or pear juice before it goes on.
Storage
Best eaten as soon as it's done; keeps 2 days refrigerated.
