Prep
• Chop the green onions into fine rounds. / • Slice the cheongyang chili peppers thin. / • Boil the somyeon noodles, then wash all the starch off under cold water.

Mix the water, soy sauce, sugar, matsul, and vinegar to make the chilled broth.

Keep the broth cold in the refrigerator.

Boil the somyeon noodles and rinse them hard under cold water.

In a bowl, layer the noodles, broth, ice, and garnishes, and add a small amount of sesame oil.

- The seasoning turns strong easily, so always taste and adjust at the end.
- If the starch isn't washed off the noodles, the broth turns cloudy.
You can fix this
If it hasn't burned or stuck to the pan, it can still be fixed.
- If the broth is too salty, add cold water or more ice. The ice thins it further as it melts, so it should taste slightly salty when you serve it.
Storage
Keep the broth refrigerated and eat the assembled noodles right away.
