    Prep

    • Rub the naengmyeon noodles to separate the strands. / • Julienne the cucumber. / • Mix the sauce ingredients ahead and chill them for 30 minutes.

    Mix the gochujang, gochugaru, soy sauce, vinegar, sugar, and pear juice into a sauce.

  3. 3

    Boil the naengmyeon noodles and rinse them in cold water.

  4. 4

    Drain the noodles well, then toss them with the sauce.

    Add the sesame oil and toss lightly.

  6. 6

    Top with the cucumber and the boiled egg.

  • Adding more sugar instead of pear juice can make the sauce taste heavy.
  • If the noodles are still wet, the sauce slides off.

If it hasn't burned or stuck to the pan, it can still be fixed.

  • If the broth is too salty, add cold water or more ice. The ice thins it further as it melts, so it should taste slightly salty when you serve it.

Storage

The sauce keeps 5 days refrigerated. Use the boiled noodles right away.
