Cookie dough
Loosen 150g of room-temperature butter until soft, add 90g of sugar and 1g of salt, and mix well. Mix in 53g of lukewarm egg, then add 1 tsp of vanilla paste and mix.

Mix in the flour
Sift in 130g of cake flour, 150g of whole wheat flour, and 3g of baking soda and mix.

Roll and rest
Divide the dough in 2, lay each on parchment paper, and roll it thin to 3mm with a dusting of flour, then firm it in the refrigerator for 20 minutes.

Caramel

If it hasn't burned or stuck to the pan, it can still be fixed.
