How to make it
- 1
Dough
Mix 280g of bread flour, 145g of milk, 28g of eggs, 35g of sugar, 3g of salt, and 3g of yeast, then add 20g of unsalted butter and knead until a thin membrane shows when stretched.
· Add the butter only after the dough has come together.

1st rise
Let it rise in a warm place for about 1 hour, until it is 2 times its size.
- 3
Divide and bench rest
Press out the gas, divide the dough into 4, round the pieces, and give them a 15-minute bench rest.
· Use a scale when dividing into 4 and the pieces come out even.
- 4
Shape
Roll each piece out to press out the gas, roll it up tight, and set it on the pan.
- 5
2nd rise
Let them rise for about 40 minutes, until they are 2 times their size.
- 6
Bake
Bake in an oven preheated to 350°F (180°C) for 15 to 18 minutes, until golden.
You can fix this
If it hasn't burned or stuck to the pan, it can still be fixed.
- Dough can only be fixed before it goes in the oven — a little more flour if it is slack, a little more water if it is stiff. Once baked, nothing can be changed.
