How to make it

Prep the water spinach
Separate the stems and leaves of 500g of water spinach and cut them into 5cm lengths.
· Stems and leaves cook at different rates, so always separate them.

Mince the garlic
Mince 10 cloves of garlic.

Fry the garlic
Put 4 Tbsp of cooking oil in a frying pan, add the garlic, and fry over high heat for about 40 seconds.

Stir-fry the stems
Add the water spinach stems first with 1 pinch of salt and stir-fry for about 30 seconds.

Stir-fry the leaves
Add the water spinach leaves with 1 Tbsp of oyster sauce and stir-fry for about 1 minute 30 seconds.

Finish
Once they have wilted well, add ground black pepper to taste and ⅓ Tbsp of chicken stock, stir-fry a little longer, and it is done.

If it hasn't burned or stuck to the pan, it can still be fixed.
- If the sauce is too salty, stretch it with stock and bring the body back with a little starch slurry.
