How to make it

Brown butter
Heat the unsalted butter over medium heat until brown solids form and it smells nutty, then strain it and cool it to 45 to 50°C.

Mix in the flour
Mix the sugar, almond flour, and cake flour, then add the egg whites and mix without whipping.

Add the butter
Add the honey, lemon zest, and brown butter, mix until smooth, and rest it in the refrigerator for 1 hour.

Pan
Fill buttered molds 80% full and set the blueberries on top.

Bake
Bake in an oven preheated to 375°F (190°C) for 12 to 15 minutes, until the edges are a deep brown.

You can fix this
If it hasn't burned or stuck to the pan, it can still be fixed.
- If the cream is loose, whip it further. If it splits, warm it slightly and whip again. Sugar cannot be taken back out once it is in.
