How to make it

    Prep

    • Have the eggs and milk mixed together. / • Have the unsalted butter soft. / • Get the red bean paste and cold butter for the angbutter ready just before assembling.

    Mix the bread flour, sugar, and salt, and add the instant dry yeast separately so it does not touch the salt.

    Add the eggs and milk and knead for 8 to 10 minutes.

    Add the unsalted butter and knead for another 8 to 10 minutes.

    Let it through the 1st rise at 27 to 30°C for about 1 hour.

    Divide it into 8 pieces of 45 to 50g each.

    Round the pieces and rest them for 15 minutes.

    Shape them as you like and let them through the 2nd rise for 40 to 50 minutes.

    Brush them thinly with milk or egg wash and bake at 350°F (180°C) for 12 to 15 minutes.

    Once cooled, spoon 40g of red bean paste and 10g of cold butter onto each one to finish them as angbutter.
