How to make it
- 1
Preheat the oven to 350°F (170°C) and butter 6 round molds or line them with parchment paper.
- 2
Loosen the room-temperature butter until smooth, then add the sugar, salt, and honey and whip it lightly.
- 3
Mix in the mascarpone, then add the beaten eggs in 2 to 3 additions, mixing so that the batter does not split.
- 4
Sift in the cake flour and baking powder, fold them through with a spatula, and divide the batter among the molds in equal amounts.
- 5
Bake at 350°F (170°C) for about 18 to 22 minutes. Push a skewer in, and take them out once it comes away with no batter on it.
- 6
Dissolve the sugar and instant coffee in the warm water to make a syrup. While the cakes are still warm, brush it over the surface, or make small holes with a straw and inject it. For the injecting method you can prepare 5 times the syrup to make the work easier.
- 7
Once they have cooled completely, mix the instant coffee and cocoa powder together and dust a thin layer over them.
You can fix this
If it hasn't burned or stuck to the pan, it can still be fixed.
- If the batter or cream is stiff, add milk a little at a time; if it is loose, add flour the same way. Once it has set, it cannot be adjusted.
