In a bowl, mix 2 tbsp yondu, 1 tbsp sugar, 2 pinches of black pepper, 3 tbsp coarsely chopped garlic and ½ tbsp sesame oil into a marinade.
· Yondu gives a clean, savory taste, and sugar at about half the amount of yondu is right. This is a garlic-based marinade, so use at least 3 tbsp of garlic for the aroma to come through when grilled.

Cut 300 g of trimmed rib meat into bite-size pieces.

Add the meat to the marinade and rest 10–20 minutes. With more time, 30 minutes to 1 hour deepens the flavor.
· This marinade isn't reduced; the meat absorbs it and is then grilled, so even if it looks like a lot, it soaks into the meat over time.

Preheat a pan and grill both sides over medium heat. Too long over very high heat can make it tough.

Finish with a sprinkle of scallions or sesame seeds to taste.
