    Toss the pork shoulder with 2 tbsp of soju, the mustard paste and the salt to season it.

    Mix the seasoning ingredients, from the gochujang through the black pepper, into a marinade.

    Coat the pork in the marinade and let it rest for 20 minutes.

    Stir-fry the pork in a hot pan; when it is half cooked, add the cabbage, onion, green onion and Cheongyang chili and finish over high heat.

You can fix this

If it hasn't burned or stuck to the pan, it can still be fixed.

  • There is little liquid here, so water thins the meat flavor along with the salt. If it is too salty, stretch it with stock only, a little at a time.
