How to make it
- 1
Mix the gochujang, gochugaru, soy sauce, minced garlic, sugar, cooking wine, sesame oil and black pepper into a marinade.
· A little green plum syrup in the marinade gives a deeper flavor.
- 2
Add the green onion and onion to the marinade and toss.
· Adding apple, pear or honey makes it even better.
- 3
Cut the pork belly into bite-size pieces.
- 4
Add the pork belly to the marinade, coat well and marinate for 20–30 minutes.
- 5
Heat a charcoal grill or grill pan.
- 6
Grill the marinated pork over medium heat. Watch that the marinade doesn't burn, and grill until both sides are golden brown.
· Grill slowly over medium heat so the marinade doesn't burn.
- 7
Serve with perilla leaves or lettuce for wrapping.
You can fix this
If it hasn't burned or stuck to the pan, it can still be fixed.
- Once it is on the grill there is nothing to fix. If the marinade is too salty, let it down with water or pear juice before it goes on.
