How to make it

    Sear the pork jowl in a hot pan until every side is browned, then pour off the fat.

    Add the water, brewed soy sauce, matsul, minced garlic, oyster sauce, sugar, ginger, and black pepper, and bring it to a boil.

    Reduce it over medium-low heat for 20 to 25 minutes, turning the meat as it goes.

    Rest the pork jowl for 5 minutes, slice it, and spoon the reduced sauce over it.

    Cut the garlic chives into 5cm lengths and the onion into thin slices, and mix the dressing ingredients together.

  6. 6

    Just before serving, toss the garlic chives and onion lightly and set them alongside the pork jowl.

You can fix this

If it hasn't burned or stuck to the pan, it can still be fixed.

  • Too salty? Do not add water — it thins the sauce. Add more radish, potato, or onion instead and let them take up the salt.
