How to make it

    Soak the beef short ribs in cold water for 2 hours to draw out the blood, changing the water once partway through.

    Blanch them in boiling water for 10 minutes, then wash them and trim off the fat and any unwanted membrane.

    Mix all the seasoning ingredients together.

    Put the ribs and the seasoning in a large pot, bring it to a boil, then turn the heat low, cover it, and braise for 50 minutes. No extra water goes in.

    Add the carrot, onion, mushrooms, and garlic and braise 30 to 40 minutes more.

    When the ribs are tender, add the green onion and chili pepper, take the lid off, and reduce the sauce until it shines.

    There is already enough sesame oil aroma, so do not add more; if the seasoning is too strong, top it up with a little pear drink.

You can fix this

If it hasn't burned or stuck to the pan, it can still be fixed.

  • Too salty? Do not add water — it thins the sauce. Add more radish, potato, or onion instead and let them take up the salt.
