How to make it

Put the smoked duck into a dry pan with no oil and stir-fry it first so its fat renders out.

Once the duck fat has come out, add the onion, green onion, and minced garlic and stir-fry them together.

Season it with the oyster sauce and jin-ganjang.

Add the spinach and toss it quickly, only until it has just wilted.

Finish with a scattering of black pepper.
You can fix this
If it hasn't burned or stuck to the pan, it can still be fixed.
- Too salty? Do not add water — it thins the sauce. Add more radish, potato, or onion instead and let them take up the salt.
