IllustrationDoenjang-Dressed Asagi Peppers
Stir-fried & braised · serves 4
How many servings?
How to make it
- 1
Pull the stems off the asagi peppers, wash them, drain them, and prick them in a few places with a toothpick (or cut them on the diagonal).
- 2
Film a pan lightly with cooking oil, add the peppers, and stir-fry them just until they lose their raw stiffness.
- 3
In a bowl, stir the doenjang, gochujang, minced garlic, sugar, and maesil-cheong together into a dressing.
- 4
Toss the stir-fried peppers with the dressing.
- 5
Finish by scattering sesame oil and whole sesame seeds over the top.
You can fix this
If it hasn't burned or stuck to the pan, it can still be fixed.
- Too salty? Do not add water — it thins the sauce. Add more radish, potato, or onion instead and let them take up the salt.
