Put 300 g of pork jowl in a plastic bag with 2 tbsp of starch and shake to coat.

Heat the oil in a pan and fry the pork until deeply golden.

While it cooks, mix 2 tbsp mirin, 2 tbsp soy sauce, 1 tbsp dark brown sugar and 1 tbsp oligo syrup with 1 tbsp jjajang powder, 1 tbsp minced garlic and 1 tbsp doenjang, pour into the pan and reduce for 10 minutes. 2 minutes before the end, add 2 red chilies and 2 hot green chilies.
