    Chop the carrot, onion, garlic chives, cabbage, and green onion fine, sprinkle the salt for brining over them, and leave them for 10 minutes.

    Squeeze the vegetables dry and mix them with the ground chicken.

    Add the minced garlic, chicken stock, black pepper, ground ginger, mirin, and 2 Tbsp of potato starch, and work it until the mixture turns sticky.

    Shape the mixture into bite-size balls and roll them in potato starch for a thin coating.

    Steam them for 12 to 15 minutes over full steam so the chicken cooks all the way through.

    Mix all the dipping sauce ingredients together and serve them alongside.

You can fix this

If it hasn't burned or stuck to the pan, it can still be fixed.

  • If the filling is too salty, work in tofu or rice. You cannot add water to a filling, so you make more of it to dilute the seasoning.
