How to make it
- 1
Mix all the egg mixture ingredients and strain it once through a fine sieve.
- 2
Soak the brioche loaf slices in the egg mixture, wetting both sides well, then let them absorb it in the refrigerator for at least 20 minutes — about 1 hour for thick slices.
- 3
In a separate bowl, beat 2 eggs with 2 Tbsp of sugar to make the egg wash for the outside.
- 4
Coat the soaked bread lightly in the outside egg wash. Melt the butter in a pan and brown every side over medium-low heat.
- 5
Finish in a well-preheated 350°F (180°C) oven or air fryer for 4 to 5 minutes more, so it is warm through to the center.
- 6
Serve with honey, maple syrup, or fruit.
You can fix this
If it hasn't burned or stuck to the pan, it can still be fixed.
- If the batter or cream is stiff, add milk a little at a time; if it is loose, add flour the same way. Once it has set, it cannot be adjusted.
