Jujube Honey Ginger Syrup

How much are you making?

This won't fit in one pot. Cook it in 120 batches. Forcing it into one means the heat won't spread evenly.

How to make it

    Peel the ginger, wash it clean, and either slice it thin or grate it fine.

    Put the ginger and the jujube juice or water in a pot and bring it to a boil.

  3. 3

    Once it boils, lower the heat and simmer it 20 to 30 minutes so the ginger's aroma draws out fully.

    Turn off the heat, let it cool below about 60°C, then add the honey and stir it in completely.

    Pour it into a clean sterilized bottle, cool it completely, and keep it refrigerated.

    Stir 1 to 2 Tbsp of the syrup into 1 cup of warm water to drink. This syrup has water in it, so don't keep it at room temperature for long — use it within 2 to 3 weeks.

You can fix this

If it hasn't burned or stuck to the pan, it can still be fixed.

  • Too sweet? Let it down with water or sparkling water. Too sharp? Add syrup a little at a time, tasting as you go. Once it is mixed in there is no taking it back, so add in small amounts.
