Oil-Confit Steak (Sous Vide)

Ingredients

  • Beef steak10.6 oz
  • Oil for confit (such as olive oil)
  • Pickling spice1 Tbsp
  • Thyme2 stalks
  • Garlic
  • Oil for confit (such as olive oil) — enough to cover the steak

How to make it

    Pour enough oil into the sous vide bath to cover the steak, and add the pickling spice, thyme and garlic.

    Set the temperature to 58°C and leave the steak in for one hour.

    When the time is up, add plenty of the confit oil to a pan and sear the steak about 2 minutes per side.
