How to make it

    Grind the shrimp

    Clean the shrimp and grind them fine.

    Prepare the aromatics

    Chop the Korean chives and peeled garlic fine.

    Make the meatballs

    Mix the ground shrimp with the Korean chives, peeled garlic, mirin, blue crab stock cubes, egg whites, potato starch, salt, and black pepper, and shape the mixture into bite-size balls.

    Build the broth

    Bring 600ml of bottled water and 2 blue crab stock cubes to a boil in a pot.

    Cook the meatballs

    Once the stock boils, drop in the shrimp meatballs and cook them through to the center.

    Add the vegetables

    Add the bok choy and enoki mushrooms, boil them, then season it with white soy sauce.

    Finish

    Slice the Cheongyang chili peppers and red chili peppers thin, stir them in, and finish with a drizzle of sesame oil.
