How to make it

    Melt the butter and let it cool to 40 to 45°C.

    Mix the eggs, sugar, salt, honey, and milk together without working too many bubbles into them.

    Sift in the cake flour, cocoa powder, and baking powder and mix until the batter is smooth.

    Add the melted butter in 2 to 3 additions to emulsify the batter, then rest it in the refrigerator for at least 1 hour.

    Butter the molds and fill them 80% full with the batter.

    Bake in an oven preheated to 350°F (180°C) for about 10 minutes, then let them cool completely.

    Spoon melted dark compound coating chocolate into the bottom of the molds, press the madeleines back in, let it set, then release them.

You can fix this

If it hasn't burned or stuck to the pan, it can still be fixed.

  • If the batter or cream is stiff, add milk a little at a time; if it is loose, add flour the same way. Once it has set, it cannot be adjusted.
