Sichuan-Style Tangbap (Soup over Rice)

Soups & stews · serves 2

How many servings?

1 ingredients were scaled below straight proportion. Salt, sweetness, aromatics, oil, liquid, and deep umami all need proportionally less as the batch grows. The grey numbers show what plain multiplication would have given.

How to make it

  1. 1

Film a pan with cooking oil and fry the minced garlic, doubanjiang, and gochugaru to make a spicy oil.

  2. 2

Add the pork or squid, the onion, and the bamboo shoots and stir-fry.

  3. 3

Pour in the water, season with the soy sauce and chicken stock, and bring it to a boil.

  4. 4

Stir in the starch slurry to thicken the broth.

  5. 5

Add the green onion and pour it over hot cooked rice to serve.

You can fix this

If it hasn't burned or stuck to the pan, it can still be fixed.

  • Too salty? Add more water or stock. A block of tofu or a potato will soak up the salt.
